Recipe of the Week - Creamed Corn with Roasted Red Peppers and Bacon

This is so late today! Not having my Sunday evening to prep for the week really throws me off!   Time for the Tuesday Recipe Link up! I am linking up with Tasty Tuesdays, In and Out of the Kitchen, and Taste of Tuesday!   

    One part of the meal I really struggle with is side dishes. Other than a plain steamed vegetable or the typical rice, potato or pasta dishes, I don't really have any go to side dishes. But I stumbled across this as we were getting the menu ready for New Years Eve last month and thought it sounded really good.  

  I don't have a step by step unfortunately for this dish, but I made it exactly according the recipe posted here, and it was absolutely delicious. I can't wait to make it for my sister, I know she and her family will just love it. It has all the right components and would go great with burgers on the grill, a ham at Easter or like we had it, with bbq ribs.    Kevin has a ton of awesome recipes over at Closet Cooking, it has become one of my go to recipe sites!
