Recipe of the Week! Creamy Fusilli with Chicken and Mushrooms

Last night sister J came over for dinner and A came later so that we could watch the season finale of The Bachelor. HELLO? I mean COME ON! Personally, I think the guy is a tad greedy! We also got to share some of our SHOCK and DISBELIEF and GALL with Miss L! She truly is the best and just puts smiles on my face! Dinner was delicious though and very good. I found the recipe here, but just changed it up a bit.

Off to volunteer for JLM and the final dress rehearsal for the American Girl Fashion Show this weekend this afternoon and then meeting C & J for dinner and a juicy lucy!

Creamy Fusilli with Chicken and Mushrooms
Ingredients

* 1 pound fusilli
* 2 teaspoons olive oil
* 12 ounces sliced mushrooms (any variety, I just used white stuffing mushrooms)
* 1 lb. diced boneless skinless chicken breast
* 1 teaspoon dried thyme
* 1/4 cup sherry
* 1 cup reduced-sodium chicken broth
* 2 tablespoons all-purpose flour
* 1/2 cup milk
* 1 cup grated Havarti cheese

Directions

Cook fusilli according to package directions.

Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and saute 3 to 5 minutes, until mushrooms soften. Add chicken and thyme and cook 5 minutes. Add sherry and cook 1 minute. Add chicken broth and bring to a simmer. Whisk together flour and milk and add to chicken mixture. Simmer 2 to 3 minutes, until sauce thickens.

Remove from heat, add cheese and stir until cheese melts. Add fusilli and toss to combine.
