Last night we had a little impromptu dinner party with two other couples. One couple from our neighborhood, and our friends C and M. I had a show on in the background on Wednesday and they were cooking up pork tenderloin with a blueberry chipotle sauce and I was just dying to try it, and figured why not use some friends as guinea pigs. It was one of those perfect Minnie summer nights, especially for dining al fresco on the deck. Some wine, good food, good friends, doesn't get much better than that.
We have had a ton of cucumbers in the garden, so I wanted to make sure that I made a salad using those. The night before the boy and I had a salad with cucumbers, tomatoes, green pepper, feta and olives with a little Kraft greek dressing. Great salad.
We started with some meat, cheese, crackers and a grilled baguette with boursin which I just love. We also had some local sweet corn which was delicious.
Here are the recipes I used for the pork and salad. Both were delicious, I will definitely be using this menu again.
