Recipe of the Week! Devon's Award Winning Chili

A couple of weeks ago, on a Saturday, I caught an episode of Barefoot Contessa where she was making this fabulous chili with her friend Devon. I quickly grabbed the recipe, made a list of needed ingredients needed and headed to the store Sunday morning. It was a cold, damp, rainy day, so the chili was the perfect thing to put on the stove and let it cook all day.

This is a Texas, brisket chili which I had never tried before, and thought it sounded good for something different. It is a chili that definitely needs a good part of the day to simmer, but it is so worth it! The leftovers went home with my mom and dad and they really enjoyed it as well. We did have some leftovers too, but I really wish we had a big freezer so that I could have put some in the freezer, but, I will definitely be making this one again!

I started out by cutting up and browning (sear) 5 lbs of brisket. I had never cooked or made a brisket before, so this was completely new to me. I cut up the brisket into bite sized pieces and dried it real good with paper towels. 

 Next up, I sauteed green pepper, onion and garlic. The house was already smelling amazing at this point.
 I added the rest of the ingredients, added the beef back into the pot, and let it cook.The recipe says to let it simmer for 2 1/2 hours, but I think the longer the better. We let it simmer for about 3 1/2 and it was perfect, but if we would have taken it off after 2 1/2 I think the meat would have been a little tough yet.
We served it with some shredded cheese, green onions, cilantro and sour cream, it was wonderful!
This will definitely be a chili that I will make again!
