When we were up at the lake over the 4th, we tried a few new recipes. But this was by far one of my favorites and I plan to try other variations.
First we prepped the birds (no we did not dress them on pink and green, however that would have been funny) by washing them thoroughly. Next I chopped up some garlic and then I shoved it under the skin of the birds. Sprinkled the cavity with salt and pepper and then prepared the glaze which was (per bird, we did three) 1/2 can of beer (a lager like Heineken is preferred, we used Miller High Life I think), 1/2 c. apricot jam, and 1 T. chile powder. Mix this together. In the mean time place the chickens butt over the remaining half can of beer. We grilled these on grill pans placed on the grill. Coat birds with glaze. Roast birds for 1 1/2 hours over a low heat (it really depends on your grill so keep an eye on them) and continue basting throughout.
These were a huge hit and I can't wait to make one again!
I love this picture, I am sorry, but I just think they look SO funny! The boy's dad was upset that we were "wasting" all of this beer and wanted to know if he could drink it when it was done. I was aghast of course and told him NO WAY! Well, of course when I wasn't looking he had to take a sip (men can be such children) and said that it tasted AWFUL. Duh! Can you imagine, all of those chicken juices running inside the can and then the warm cooked beer? His nephews were worried they would get drunk if they ate too much. Men!

I had beer can chicken for the first time a few weeks ago and it is sooooo good! It is so funny to see them standing up like that!
