Meal Plan Monday!

Hey there, I will be back with more later tonight. Last week completely got away from me, but I do have a couple of big updates. For now, here is a very quick meal plan for the week. For more Meal Plan Monday's check out Org Junkie!

Monday: Chipotle Blue Cheese Stuffed Chicken Breasts (recipe below)
Tuesday: Leftovers (JL Meeting)
Wednesday: Enchiladas
Thursday: Tuscan White Bean Soup with Prosciutto
Friday: Dinner and a movie
Saturday: Dinner and the Ordway-St. Paul Chamber Orchestra
Sunday: Auto Show, pick the boys parents up from airport, dinner out

(okay my cut and paste is not working at the moment so recipes later! SORRY!)

A couple of updates, here is the recipe for the

Chipotle Blue Cheese Stuffed Chicken Breasts

Ingredients:
4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 small can chipotle in adobo sauce
1 C. crumbled blue cheese
ground black pepper, salt, paprika
2 T. olive oil

Directions:
1. Preheat the oven to 400 degrees.

2. In a small bowl combine 1/4 can (depends on your taste, I used 1/2) of chopped chipotles in adobo sauce with blue cheese.

3. Lay the chicken breasts on a clean surface and distribute the mixture onto the center of the chicken breasts. Fold the chicken over the filling and secure with toothpicks. Place tin foil in a shallow glass pan and place chicken breasts in pan. Sprinkle with salt, pepper and a small amount of paprika. Spray with olive oil lightly.

4. Bake for 30 to 35 minutes or until the chicken juices run clear and the filling is hot. I served with roasted asparagus.

I think I may head over to your house for dinner tonight! I love anything w/ blue cheese, gorgonzola etc. so I will definitely be checking back for that recipe:)
