Grateful Friday, Recipe of the Week!

I am just getting packed up ready to go for the weekend, but just a post before I go!

There are again so many things to be grateful for this week, but first and foremost, health. The boy's mother is doing fabulous and is on the road to recovery! It is going to be a while before she is 100% but because she was so healthy going into the surgery, she is doing fabulous. Thank you all so much for your kind words and thoughts!

A couple of weeks ago I got to be the surprise guest at lunch with these fabulous kids (goofballs). I had so much fun and showed up in a sundress and pearls and all of the kids were whispering who is that who is that, and all I heard in response, "oh, that is just our crazy Auntie Jilly". I was thankful to my sister though who told me to bring my own salad. I don't know how kids eat that stuff.

Sometimes at night as I lay in bed reading and drift off to sleep happily, I take for granted the fact that I can read. I LOVE to read and it takes me away to so many different places. I like to read all different sorts of books and magazines, so this one is a three parter, I am thankful for the fact that I can read and the teachers in my life who taught me how, I am thankful for all of the bookclubs that introduce me to new books and I am grateful for everyone who is so creative and brings new reading material to my world.

The flowers are blooming, my herbs are growing and it is hot as heck here, so I am very grateful to be heading out of town for the weekend, but I am glad that we took the time this week to get all of the "chores" done so that we can rest and relax this weekend. I am also glad I took a moment last night to catch up with a friend sometimes you just need to take a moment, but I also love those friends that you can go forever without actually speaking with, but just pick up right where you left off. She is also one of those friends that I just seem to have a lot in common with, so it is always fun to just "catch up"! I just wish that she lived closer so that I could babysit!

I am thankful that it is summer and summer foods abound. I made a great recipe this week that I wanted to share with all of you and it goes something like this!

Thai Pork over Rice
1 pork tenderloin, sliced thinly
1 yellow pepper
1 green pepper
1 onion
1 small bunch thai basil
3 T. soy sauce
2 T olive oil

Saute pork, chopped peppers and onion in olive oil, add soy sauce and simmer. Stir in thai basil. Serve over rice. Very easy!

I'm glad that the boy's mother is doing so well :)

And I love the picture of those crazy kids, they look like they're full of spirit.

AND, I just told hubby that I know what we're having for dinner this weekend. I love Thai-anything and your recipe looks both yummy and easy!
