Recipe of the Week - Trisha Yearwood's Chicken Tortilla Soup

Unfortunately it was a busy night and I didn't get good pictures of the making of this recipe, but I wanted to post it because it was such a good recipe, I will definitely be making it again. 

I don't have Trisha Yearwood's cookbook, but I think it might be one I need to purchase, I have found a few of her recipes and seen her show on the Food Network and she is always cooking up something delicious. This soup was no exception!

We have been buying rotisserie chickens and the boy will take the chicken off of the bone so that we can use it in different recipes during the week. It is easy to throw it into a soup. 



Recipe (I changed her original recipe to use what I had on hand, it still turned out wonderfully!)
Ingredients

Ingredients

3 tablespoons butter
1 teaspoon minced garlic
2 medium onion, finely chopped
2 tablespoons all-purpose flour
Three 14-ounce cans chicken broth
4 cups half-and-half
1 cup prepared salsa, mild or spicy
1 rotisserie chicken - pulled off the bone
Two 15-ounce can black beans, drained
One package Trader Joe's roasted corn, frozen
2 teaspoon ground cumin
One package taco seasoning

Toppings, cheese, tortilla strips and sour cream

Directions
Melt the butter in a large pot over medium heat. Add the garlic and the onion and saute until softened, 5 minutes. Add the flour and stir well, cooking for 1 minute more. Add the broth and the half-and-half. Stir in the salsa, chicken, beans, corn, cumin and taco seasoning. Continue to simmer over low heat for 15 minutes.

Crumble the tortilla chips into individual bowls and top with a ladle of soup. Sprinkle each serving with cheese and tortilla strips and add a dollop of sour cream.
