We started with a Caramelized Onion Apple Fontina Flatbread, it was so delicious! It was really fun to watch how the pizza dough puffed up on the grill too.
There were four work tables with groups of about 6 to 7 people at each one. It worked out pretty well as we each got to help out a little here and there.
The boy of course has to ham it up, that is our instructor in the middle, he was a very good instructor and did a great job of leading the class.
Each course had something that was made on the grill. Here is assistant chef taught us about how to properly measure the temperature of meats on the grill.
This was probably my favorite course of the night, but I LOVE beets, and I love golden beets even more than the purple ones. This was a grilled beet & apple salad with bacon and apple vinaigrette. The boy doesn't like beets, otherwise I would make this on a regular basis.
Our main course was Applewood-Smoked & Cider Brined Pork Loin, it was delicious!
We also made a Apple Rosemary Chutney to go with the pork, the smell of that while it was cooking was heavenly. We also had Apple Stuffed Acorn Squash, Apple-Cashew Stuffing. The whole meal was absolutely delicious!
Of course we had to wrap things up with dessert, and Apple Tart Tatin, it was SO good!!!
These cooking classes are so fun, the meal is wonderful and working with friends is a blast!

Why oh why do we live so far away from each other?!? This looks great, we would have been there right along side you, just as you would be heading out with us tonight to a beer and bourbon tasting.
