Recipe of the Week! Chicken and Pasta with Spinach Cream Sauce

So, I make up recipes more often than not. Sometimes they work out, sometimes they don't. Last week I tried to make one up, didn't work, and made one from a recipe, didn't like it. But I made this a couple of weeks ago and I loved, loved, loved it. Again, the boy, not as big of a fan as I am, but this is one of my go to meals.

Have you tried Philadelphia Cooking Creme, oh my. . . LOVE! Seriously talk about the easiest thing you can imagine. . . .so this is what I whipped up with mine. . .
I started with a package of boneless, skinless chicken breast, cut that up and browned in a pan with garlic salt and pepper and a little olive oil. Next up, I tossed in some minced garlic and some cherry tomatoes that were about to get a little soft, as that cooked down, I added in a pound of fresh spinach, little by little, and then finally, the Italian Cheese and Herb cooking cream along with some chicken broth. We had this over angel hair which we both really enjoy. Made for a great weeknight meal, very easy, and it made great leftovers.

That looks really GOOD. I just saw that cooking cream at the store and was curious. You always are ahead of the curve on the those new products!
