Recipe of the Week! Chicken Parmesan

I love Italian food, pasta is by far one of my favorite things, and I know that for me, personally, I think it is one of the best things I can actually cook! The boy however, not as big of a fan of pasta as I am. He likes potatoes and rice, but pasta, forget it.

Last week I whipped up some Chicken Parmesan, and thought I would document my recipe. I am not very good about actually following recipes, but this one is usually pretty standard for me.

Start out with a few chicken cutlets that you flatten with a meat mallet (I use three so that we each have one for dinner and then each have a half for leftovers)
 A couple of swirls of olive oil, a dash of some red pepper flakes
While this is heating up, whip up a couple of eggs, I didn't really need two, one would have been plenty, but I am a just in case kinda girl.
Some panko breadcrumbs, about 1/2 C. parmesan cheese, salt, pepper, garlic powder
Dredge in egg and bread crumb mixture and place in heated pan.

Place in 9 x 13 pan and surround with pasta sauce.
 
 Top with mozzarella cheese
Bake at 350 for about 30 minutes. I broil for about 5 minutes at the end to brown the cheese.
I served it last week with angel hair pasta and broccolini (LOVE broccolini)!

Easy, delicious weeknight meal!
