Recipe of the Week!


So last night the boy and I kind of poked around and I didn't get to making dinner until later, and I wasn't all that creative, but this is what I came up with. Easy schmeazy and tasty! We had this with a fresh salad and some garlic toast (and of course a nice glass of red for me and a big ol' glass of milk for the boy).

Jilly's Chicken Parmesan

1 package smart chicken tenders (this is the organic, hormone free chicken)
1/4 C. shredded fresh parmesan
1 egg (fork whipped)
3/4 C. Italian style bread crumbs
1/4 C. Japanese style panko bread crumbs
garlic salt to taste
fresh ground pepper to taste
1 can Italian style diced tomatoes
1 jar of your favorite sauce
cooking spray
fresh mozzarella or fresh shredded

your favorite pasta

1. Heat oven to 350 degrees. Mix together bread crumbs and parmesan, sprinkle garlic salt and pepper, mix together.
2. Dip chicken tenders in egg mixture, coat in bread crumb mixture. Cook in a heated skillet on medium coated with cooking spray. Should take about 2 to 3 minutes per side.
3. Cover the bottom of a glass baking dish. Pour diced tomatoes over, then sauce. Cook for about 20-25 minutes, top with mozzarella and cook another 10 to 15. While cheese melts on top cook pasta. Serve over pasta.

This looks way yummy, but what I really like is that you drink wine and boy has milk! Sounds like our house :)

Looks delicious. This (minus the panko and bread crumbs) is one of my favorite easy low-carb recipes.
