Recipe of the Week! Chicken Nacho Bake

Are you seeing a pattern here. We love chicken and we love Mexican, and there are so many different ways to incorporate the two! I made this a few weeks ago, I have not been cooking very much lately, we are on the run a lot at the moment and summer time it gets even more so.

Chicken Nacho Bake

4 Boneless, skinless chicken breasts
Thick and chunky salsa, about 1 cup
1/2 cup sour cream
1 cup crushed tortilla chips
1/2 cup shredded cheese

Preheat oven to 400 degrees. Coat 9 x 14 (you know a lasagna pan) with cooking spray.
Place chicken breasts in pan, coat with sour cream, cover with salsa, chips and cheese in that order.

Bake for 20 minutes or until chicken is cooked through. Enjoy!
