Recipe of the Week!
Apples are EVERYWHERE this time of the year, and I love going to pick my own, hopefully the boy and I will have the opportunity at some point this fall. I made an apple crisp over the weekend up at the lake, no recipe though I just winged it and it was okay but I think I would like to try one WITH a recipe. I do love these baked apples though, hopefully you will too!
Baked Apples
2 tart apples (I use Honeycrisp because they are a favorite and they were "invented" here in MN)
2 T. butter
1/3 C. brown sugar
1 t. cinnamon
sprinkling of raisins (I use a combo of golden and regular)
handful of chopped pecans
dollop of vanilla ice cream
1. Preheat oven to 350 degrees Farenheit.
2. Scoop out a well in the core of the apple, do not cut all the way through. Place in a shallow baking dish. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter and raisins. Sprinkle with cinnamon and pecans (or walnuts your choice or none even, I am just a little nutty).
3. Bake for 15 minutes or until sugar begins to caramalize and apples are tender. Serve with ice cream.

OMG! These look fabulous!
Oh yum, those look so good! I'm definitely going to make them since I have a ton of apples on hand.
