Meal Plan Monday


Another busy week here, so no real meal plans, and we have a ton of leftovers and soups and chile's that I have made and frozen. So yesterday we made a trip to Costco and the grocery store for fresh veggies and fruit for lunches as well as some bagels for breakfast.

Monday - Another day off for the boy and I. We had some things that needed to be taken care of. Tonight however we are off to a wine dinner at Pierre's, I cannot wait! This is the menu that he tempted us with.

The first course will be Duck Confit "Canneloni" made with a mushroom butter sauce and paired with a glass of Carpe Diem Pinot Noir.

Afterwards we will be enjoying Salmon Coulibiac~delicious Salmon wrapped in puff pastry and served with a chive butter sauce~and paired with Calina Chardonnay from Chile.

The third course of the night will be Beef Tenderloin with Pommes Dauphine~prepared in a horseradish red wine reduction and a root veggie mousse. The Beef Tenderloin will be paired with Hess Collection "Block 19" Cuvee.

And finally, we will top off the night with delicious homemade orange-honey and chocolate Madeleines served with homemade vanilla bean Ice Cream and paired with an glass of Ramos Tawny Porto.

Tuesday - Shecky's Girls Night Out. I will be volunteering the first part of the night and then enjoying after.

Wednesday - Friends T & G for dinner. I am making Chicken Enchiladas with spanish rice and black beans, T is bringing guac, and I think I will do a cactus pear margarita.

Thursday - Kids in the Kitchen Volunteer event for JLM

Friday - Taste! Mpls/St. Paul Magazine wine tasting event

Saturday - Summit duty for the 10:30 am shift and then a cocktail party in my neighborhood in the evening. I hope the weather holds up so that it is a nice walk! I also need to find a fun appetizer recipe to bring.

Sunday - Brunch at my house with the girls, I have not finalized the menu yet, but I have gotten some great recipes lately that I cannot wait to try. Sunday evening, we have a new couples dinner club and we are getting together for some planning Sunday night at my house. Everyone is bringing an appetizer and a bottle of wine to share! WHEW! Seriously. I know that this is the busy season, but this is BUSY. I love to cook, so at least I have made a broccoli and cauliflower soup. We also have leftover white chicken chili as well as regular chili leftover and frozen to have on the go. I can even grab a bagel to tide me over here and there and we have a ton of apples. Tis the season of the apple! Next week is a little slower, but I am trying to figure out when I am going to get a chance to get caught up on all the new shows!
