Recipe of the Week!

I mentioned that I had made this recipe about a week ago, and I loved it. Give it a try!

Good Earth Greek Orzo Salad

Ingredients:

Orzo, cooked 3 cups
Kalamata Olives 1/2 cup
Feta Cheese 1/2 cup
Artichoke Hearts 1 1/2 cups
Rice, cooked 1 1/2 cups
Red Pepper, diced 3/4 cup
Green Onion, minced 1/2 cup
Fresh Oregano, minced 2 Tablespoons
Lemon Pepper 1 1/2 teaspoon
Sugar 1/2 teaspoon
Salt 3/4 teaspoon
Cucumbers, diced 1/2 cup
Fresh Spinach, chopped 1/2 cup
Greek Vinaigrette* 3/4 cup



* Greek Vinaigrette
Ingredients: Amount:

Olive oil 1/2 cup
Lemon Juice, fresh 1/3 cup
Salt 1/2 teaspoon
Mustard, ground 1/2 teaspoon
Oregano, dry 1/2 teaspoon
Pepper, black 1/4 teaspoon
Sugar 1/4 teaspoon
Garlic, granulated 1/4 teaspoon
Oregano, fresh minced 1/2 teaspoon

Whisk all ingredients together

Makes 1 1/3 cups

Preparation:

Salad Instructions:

Add all ingredients together.
Serve with thick slices of tomatoes.

Serves: 6-10

This looks divine! I bought orzo last weekend for the first time (though I've eaten it a lot at others places) so I will definitely be giving this recipe a try. Thanks for sharing!
