Celebrity Sightings and Recipe of the Week! Spiced Maple Glazed Salmon

So last night the boy and I braved the cold (neither of us felt like even leaving the house it was so COLD, the boy even skipped the gym and came home and curled up with a blanket and napped) and headed out to the Msp/St. Paul Mag Best of Party at the Walker Art Center. We both said before we left that we knew once we got there that we would both have a good time. We did. We had quite a few celebrity sightings. The first being these girls,

what? Not celebrities? Well okay, I can see that, but it was a lot of fun to run into them. And we all had fun listening to these guys, recognize them?

All along the way we were sampling some of the best food, from some of the best restaurants in the Twin Cities, but no peanut butter and nana sandwiches. . . .

The food was really good and the wine club has reservations next week at 9 of the restaurants, for restaurant week, that were represented last night so I spent some time meeting chefs, owners and managers talking to them about menus for next week and what the group can expect and look forward to. I missed getting photos of Madonna and Cher (okay so they were impersonators, but they all sang and quite well I might add!) I also ran into a couple of guys that I grew up with that I had not seen in quite a while. All in all it was a really good time and we came home with some fabulous loot bags!

Again tonight it is supposed to reach windchills of -30 to -40 below, brrrrrrrr, I do not plan on leaving the house tonight and I am looking forward to a fire and curling up. Last Friday night it was pretty chilly as well so the boy and I decided to stay in, enjoy a movie, some catch up on DVR and a fire. I also made this for us, which was SO SO SO good that I just had to share the recipe with you guys too! I LOVE salmon, probably one of my favorite things to eat and I actually get to the point where I just crave it, so I am always looking for new ways to cook it up, this is now on my top five. I even made up some extra seasoning mix for the rub so that I can whip it up even faster (however, I was so anxious to eat this and get it in the oven, I did forget the green onions)!

Weight Watchers Spiced Maple-Glazed Salmon recipe


Makes 4 servings

2 teaspoons paprika
1 teaspoon chili powder
1 teaspoon ground dried ancho chile powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/2 teaspoon brown sugar
1/2 teaspoon sea salt
4 (6 ounce) salmon fillets
1 tablespoon maple syrup
1 tablespoon melted butter
1 tablespoon chopped green onions


Preheat oven to 375 degrees.
Combine the paprika, chili powder, ancho, cumin, garlic powder, and brown sugar. Sprinkle with the filet's with salt, then rub with the spice mixture. Combine melted butter and maple syrup (I used 100% pure); drizzle each fillet with a bit of the mixture, make sure it was pretty well coated. Then sprinkle each with a bit of green onion.

Bake for 10 to 12 minutes, or until it flakes with a fork.

We had this with rice and sugar snap peas, VERY good! Enjoy! Thanks Pink Shoe!

I had to do a double-take- your salmon dish looks so tasty- it looks as if it were prepared in a restaurant!

I believe we have the same dishes- Lenox Butler’s Pantry?
