Recipe of the Week!
A week or so ago, after getting back from the lake, we really did not have any food in the house, I was leaving for the week, so the boy did not want to go grocery shopping, so I opened the cabinets, took inventory and threw this together. I never have a problem doing this. I can almost always open up the cabinets, fridge and freezer and put something together. Can you do this? My sister thinks it is a miracle when I am able to do this, it just astounds her that I can go over to her house, she will say she has nothing let's order pizza and I will say let me give it a shot and I can just throw something together. I guess I like the challenge too. So this is what I came up with, can you think of a name for it?
1 jar pasta sauce, any kind will do
2 cans of mushrooms (I prefer fresh, but again, in a pinch)
1 box frozen spinach
1/2 box of capatelli (angel hair, but any pasta would do)
fresh mozzarella (luckily we had this leftover from the lake)
fresh basil
salt and pepper to taste
garlic salt
Boil water for pasta and follow directions on box. Warm sauce in pan, add spices and mushrooms. Drain frozen spinach in strainer with hot water, squeeze out excess water and add to sauce. Drain pasta, put in baking dish, pour sauce over pasta, top with fresh mozzarella and fresh basil. Bake at 375 for 15 to 20 minutes or until cheese melts. Enjoy!

Looks yummy! I'm getting more creative than I used to be. It takes talent girl! You've got talent!
Serious talent! To be able to walk into a kitchen and just cook, that's a superpower I would love to have!
